Orange Creamsicle Using Real Oranges

I do not like fruit. The only fruit I can tolerate (usually) are green apples, and even then it takes a lot of convincing for me to eat them. I asked on Facebook for advice about how to get more fruit in my diet, and a few people who responded advised me to try smoothies. Since I am not a yogurt fan either, I didn’t even give it a thought until I noticed we had a lot of oranges hanging around in my kitchen, and there were likely going to rot before anyone ate them. Which is a tragedy. Because I hate wasting food.

Enter the smoothie. Since I had no idea about how to make one other than blending yogurt and fruit, I went ahead and searched for my blender. Which was not in the kitchen. Which means, I can only assume, that it’s still packed in a box somewhere. No biggie, because I have a Magic Bullet that I used to make The Younger’s baby food and that was unpacked (not sure how that happened, but oh well.)

Best. Smoothie. Ever. Um, I can only assume since it’s the only one I’ve ever had, but still! Seriously, I had one as a snack yesterday for the first time (with a few oops), and I had one for breakfast this morning. I had both The Older (who hates yogurt and fruit too), and The Younger (who admittedly eats everything) taste it. Both of their eyes grew wide, and The Older even exclaimed, “I want one when we get home from church!”

INGREDIENTS:

  • Juice from one (or how ever many you want) oranges. I cannot stress enough the importance of removing all the seeds. I didn’t and in my first smoothie I bit into one and it was really, really bitter and messed up the whole experience. I actually peeled, de-seeded, blended, and strained the juice this time.
  • 1/2 to 1 cup of vanilla yogurt. I used Cabot Greek Yogurt for mine. This is depending on how many people are having smoothies, of course. Add more if more people are drinking. If you’re sticking to the 1/2 to 1 cup, I found that one orange was a good balance.
  • 1 cup ice.
  • If you like a more bitter/citrus flavor, you can put some orange zest in as well.

Blend all ingredients, and there you have it: A great creamsicle-flavored smoothie! It would be great in the summer too, and I have visions of sitting by the poolside with one of these, perhaps with an umbrella and some sort of ‘adult’ additive?


Easy Almost Pot Pie for Crock Pot

Dice up 1/2 onion (or more depending on taste) and mince garlic 2 garlic cloves; add to crock-pot along with cream of chicken and mushroom soup, 2 soup cans of water, frozen mixed vegetables, mix together. Add chicken breasts.

Cook on high for about 6-8 hours, 2 hours before serving, cut biscuits in strips or into quarters, set on top of soup mixture or mix everything together.

**If you want more of a doughy noodle stir biscuits into the mixture.

The only changes I made to it were to add more veggies, and a tbs of cornstarch because I don’t like soupy sauces. I also used nonfat Pillsbury roll dough. I do have to say, that I actually found the leftovers better than the original meal!


Easy Ham Crock Pot Recipe

I have another easy recipe. It turned out so well that every member of the family ate it, and the Youngest was able to eat it without me worrying that she was going to choke. It was THAT tender!

One frozen Jennie-O ham
1/2 bottle BBQ sauce (I used honey BBQ)
3/4 cups hot water
1/4 cup apple cider vinegar

I heated the BBQ sauce, water, and vinegar so it was thinned. I added that and the frozen ham to the crock pot, put it on low, and let it cook all day.

WOW! It was great.


Easy Chicken Recipe

I got an easy recipe from a friend of mine, Lisa, that’s great for an easy dinner in the crock pot:

Chicken breasts
1 packet taco seasoning
Water

Yup, that’s it. Throw the chicken in the crock pot, cover with water (I put the taco seasoning in some warm water first, then filled the rest of the way with cold), then set it on low.

I plan to shred it and made a taco salad for dinner.
